Buckwheat Cereal (Kasha)

Buckwheat Porridge Ingredients
2 cups buckwheat
4 cups water
1/2 teaspoon salt
2 tablespoon butter

Boil water with medium heat. In a meantime, prepare the buckwheat by washing it throughout in a large bowl under the stream of warm water. As soon as water boils, put the buckwheat in it along with some light salt and boil for 15-20 minutes. When water boils again, reduce the heat and cover a pot with a lid.  Simmer for additional 12 - 15 minutes or until water completely evaporates and buckwheat becomes soft and increases about two times of its uncooked size. Remove from heat, add butter and let it stand for about 5 minutes before serving it.

Buckwheat is extremely healthy and a favorite dish throoughout Russia.
