4 large red, green or yellow bell peppers
2 oz mayonnaise
1 tbs. olive oil
2 cups cooked rice
8 oz. tomato sauce
2 cloves garlic, minced
1 onion (chopped finely)
2 oz of dill weed
Salt to taste
Pepper to taste
Preheat oven to 350 degrees while prepare bell peppers. Wash them thoroughly and remove the stem end from each pepper. Clean the insides from seeds and put all bell peppers in boiling water for 2 minutes. Drain in cold water.
Sauté grated carrots, minced garlic and chopped onion in a frying pan over medium heat with small amount of olive oil. When vegetables get softer, add ground turkey meat and cook for 5 minutes or until color of meat changes to light brown. In a large bowl mix cooked rice, turkey, vegetables, tomato sauce and seasonings. Stuff the hollow bell peppers and place them upright next to each other in a baking pan. You can also put the rest of tomato sauce on the top of each pepper. Cook for 30-40 minutes. Remove from oven and let stand for 5 minutes before serving. Garnish with sour cream and fresh or dry dill.
