Russian Cossack-Style Chicken


Ingredients
4 boneless skinless chicken breasts
1/2 cup flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1-2 eggs
1/4 cup milk
2 tablespoons vegetable oil
2 peeled apples
2 ounces of shredded cheese

SAUCE:
6 ounces of fresh mushrooms
1 onion
1 clove garlic
3 tablespoons of butter
1/4 teaspoon salt
1/4 teaspoon black pepper
1-2 tablespoons flour
1 cup of sour cream


In a large bowl beat eggs and milk. In a separate bowl add seasoning to flour. Dip skinless and unthaw chicken breasts in eggs and milk mix, then roll it around in seasoned flower.

Heat vegetable oil in a deep frying pan. The oil considered to be hot enough for cooking if a drop of water boils in it instantly.

When frying pan is ready, cook chicken breasts constantly turning it around until it turns golden brown on the outside.

Next place pre-cooked chicken breasts in a single layer cookie sheet and cover it with slices of apples. Set it aside and start making sauce.

Sauté the onions, garlic and mushrooms in the butter until tender (about 10 minutes). Add flour and seasonings and simmer until the flour has absorbed the butter. Add the sour cream next and stir until the sauce is thick and creamy.

Cover the apple topped chicken pieces with sauce and sprinkle with the shredded cheese. Bake at 375 degrees for about 40 minutes.
